Bacon Chocolate Chip Cookie Recipe

 

Bacon Chocolate Chip Cookie Recipe
Recipe makes 5 dozen cookies.

 

Ingredients:

  • 6 slices bacon {thick cut works best}
  • 1 1/2 cups brown sugar, divided
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 3/4 cup butter, melted
  • 1/2 cup sugar
  • 1 tablespoon vanilla
  • 1 egg
  • 1 egg yolk
  • 1 1/2 to 2 cups semi-sweet chocolate chips

 

 

Directions:

  • Arrange bacon slices side by side on a baking sheet.  I recommend lining it with foil first!
  • Sprinkle 1/2 cup of brown sugar over the bacon.
  • Bake at 350 degrees F for 15-20 minutes or until crispy, turning after 10 minutes of baking.
  • Remove crispy bacon and allow to cool.
  • Once cooled, chop finely.
  • In a small bowl sift flour and baking soda.
  • In a medium bowl {or stand mixer} cream butter and remaining sugars.
  • Mix in vanilla, egg, and egg yolk and beat until light and creamy.
  • Slowly mix in flour mixture.
  • Fold in chopped bacon and chocolate chips.
  • Spoon small balls of dough onto a baking sheet.
  • Bake at 325 degrees F for 10-15 minutes, until edges begin to brown.
  • Remove from the oven and let cool on pan for 5 minutes before moving to wire rack to completely cool.

If you’ve followed my blog for long you’ve known that I’ve been working on lowering my calories and increasing my activity.  In other words, I want to lose weight!  Although I’ve been pretty proud of my efforts so far I did struggle a little during the holidays.  The holidays are full of stress and extra temptations that can derail the best of intentions.

 

While enjoying the holidays I was also trying my best to eat in moderation and avoid the desserts that my sweet tooth very much desires.  One of the tips I’ve used to do that, besides drinking more water, was to chew gum.  It’s added sweetness helps keep the cravings away and it keeps my mouth busy.  It won’t always work but it comes in handy pretty often!

 

Something else that helps people reach their goals is alli® and their website LetsFightHolidayFat.com.  This site is a great online guide for those trying to eat healthy and exercise a little bit more this holiday season and into the new year.  It’s perfect for anyone who has weight loss on their list of new years resolutions!

 

I was excited to check out this site and look as I’m always needing a little extra inspiration.  I know a lot of people who would like this site!  It has three core elements for someone trying to lose weight.  The three core elements are: diet, physical activity and motivation! It helps you track individual goals and prepare for long-term success.  How great is that?!

 

Here are some great tips from Samantha Harris on how to fight the fat this holiday season!

 

1. Make healthy low-fat food choices – swap out the high fat ingredients in your favorite holiday recipe for healthier options

 

2. Snack Often – have healthy snacks at hand to help keep you from reaching for holiday goodies. Apples, low-fat string cheese, and baby carrots are low-fat and easy to pack! Have a sweet tooth? Try a small peppermint candy (fat-free) to satisfy your temptation.

 

3. Exercise, Exercise, Exercise. – Finding small ways to fit in physical activity can help maintain your weight and energy throughout the season. Going holiday shopping? Park the car in the farthest spot from the store entrance. Cooking? Work your legs with squats while waiting for water to boil.

 

4. Plan Ahead. – Going to a holiday party? Eat a low-fat snack at home to help you stay on track and avoid over-indulging in unhealthy choices.

 

5. Keep stress levels low. – Eating healthy and being physically active can play a big part in keeping holiday stress at bay. Keeping stress levels low also may help prevent weight gain. Try to find a time in a busy day to take a few minutes for exercise, deep breathing or eat a healthy, low-fat snack

I’ve been a huge fan of Aldi for years, I love them!  They have fabulous prices and their stores are laid out well so you can get in and get out without much hassle.  Check out our Aldi deals of the week every week!

 

Play Food

 

Check out this super cute plastic food that I was able to score at Aldi!  I had told a friend of mine that I had bought my daughter a kitchen and I asked her if she knew where I could find some plastic food to go along with it.  I got a wooden kitchen so I wanted plastic food to avoid a very noisy play time.  The next day she called me from Aldi excited that she had found an 80 piece set for less than $10!  I called my Mom to see if she wanted to buy this for my little one for Christmas and she jumped at the chance.  She picked up the set at the Aldi near her and she said that she couldn’t help but buy the additional pots and pans set with spatulas, spoons, and a mini burner for around $5.  Isn’t that awesome?  The friend who originally told me about the plastic food ended up buying a wooden kitchen from Aldi and she said that her daughter had a blast putting it together herself (she bought it for another little girl).

 

Not only is Aldi great for gifts, and every day grocery savings, but it’s the perfect place to buy your holiday food at a discount.  For every occasion that we buy a turkey or ham we go to Aldi.  They always have a good supply with a wide range of sizes available.  My family bought 16 turkeys to donate to families this Christmas and being the bargain shopper I am, I made sure Aldi was the lowest price and of course it was!

 

How to Grill a Whole Chicken

 

The above picture is a chicken purchased at Aldi.  Doesn’t it look yummy?  That image comes from a post that my husband and I are working on together.  You should expect the full post on how to spatchcock a chicken {fancy words for the specific way you cut it} and how you grill a whole chicken soon.  It will probably be ready later this week.

13 Things to Cut in Half to Save Money

When it comes to living a frugal life, one of the best ways you can save is to use less of the products that you do buy.

When you use less the product will last longer, which means you’ll have to buy refills and replacements less often.  Many of us use far too much of things without even realizing it.  Often we do this simply out of habit but if we’ll slow down to think about how much we’re using we can save so much!

The key is to remember is that there is no correct exact amount for these items.  You’ll have to experiment with each of these to figure out exactly how much is needed for you and your family.  Some of you may be able to reduce your usage by more than half while others aren’t able to even give up half.  These small savings may seem inconsequential but when combined together they can add up to some serious savings.

Here are 13 things you can cut in half to save money:

  • Paper-Towels/Napkins – Buy the perforated paper-towels that way you can only tear off what you need and none is wasted!  I love these!  Most of us barely use paper-towels or napkins before throwing them away.  If you’re not sick and you don’t have stains on them, why not reuse them?   I learned this trick from my grandpa.  He would always have a stack of napkins at his seat that he would reuse when my grandmother didn’t prepare the meal and give him another napkin.  Of course you could also use fabric napkins that you can throw in the wash and reuse instead!
  • Dryer Sheets – As soon as you buy the box, break out the scissors and cut your dryer sheet expenses by 50%! Or you could use each dryer sheets twice, this works just as well with less work! {Check out the other ways to save on laundry costs.}
  • Laundry Detergent/Fabric Softener – Danielle, from Family Centsibility, recommends cutting the recommended laundry detergent and fabric softener in half.  I agree with her!  Since I did this for my baby’s clothes and it got them just as clean, removing stains and all, I decided to try it on all of my laundry.  It works like a charm and I’ll never switch back to their recommended amounts!
  • Soap – You can reduce the amount of liquid soap you use by  50% or more without sacrificing clean hands.  All you really need is a tiny drop.  Trust me, the liquid soap manufacturers know this too.  You know what foaming soap is, right?  It’s nothing more than a small amount of liquid soap mixed with water.  You can make your own refill of foaming soap by mixing a tablespoon of liquid soap into a foaming soap dispenser, adding water, and shaking.  The foaming soap gets your hands just as clean as liquid soap which shows just how little of the liquid soap is really needed.
  • Sponges – Simply cut them in half before using them and only use one half at a time.  You’ll never miss the other half!  Plus, microwave them or run them through the dishwasher to disinfect them so you can use them longer. {Check out the other unusual items you can run through your dishwasher.}
  • Serving Size – Most everyone in our culture overeats on a daily basis.  There aren’t many people who wouldn’t benefit from smaller portions.  Not only will this save a lot of money but a lot of extra calories too.
  • Juice – Juice is yummy but it’s also an expensive habit if you’re not careful.  No one was meant to drink 30 strawberries or 12 apples at once.  100% juice is a lot stronger than you need to drink.  We usually water our juice down by half and while it took a while to get use to at first, because 100% is all we ever knew, we love it and are completely satisfied with it now.  If you start your children off with watered down juice they’ll never know any difference.
  • Printer Ink –  Printer ink costs an arm and a leg and this is especially true for colored ink.  While cutting your ink cartridge in half won’t help at all there are a few simple steps you can do to reduce the number of cartridges you buy. The first step is to change your printer settings so it only prints in monochrome.  You can simply change it back to color any time you need to print in color.  The next is to set it in draft mode for all your printing.  You can switch it back to the full mode when printing an important document.  These simple steps will help you save at least half of your ink!  {Check out how to save $20 a year by switching fonts.}
  • Dish-Washing Soap – It doesn’t take much dish-washing soap to make a sudsy sink.  Whether you put the dish-washing liquid in the water or directly on the sponge or dishes, you just need a handful of drops.  A few drops is just as effective as a huge squirt but will cost you a lot less over time.
  • Shaving Cream – A think layer of shaving cream is all you need.  A thick layer of shaving cream doesn’t make the shave any closer. If you want a closer shave, the best way to get this is to shave twice with thin layers of shaving cream.  Shaving twice with thin layers of shaving cream will give you a closer shave and you’ll still use half the amount of shaving cream than most people do.
  • Make Up – Contrary to what some may think little is actually more when it comes to make up.  It’s important to find the colors that are best for your complexion, face shape, and hair color.  It may take some time (and money) to find the best look for you but once you do you’ll save your self time, a lot of wasted product, and frustration.
  • Kool-Aid & Other Drink Mixes – Amy, from Savvy Saving Couple, recommends cutting the drink mixes in half for 50% less sweet drinks.  This is better for your figure and your wallet!  I like it!
  • SOS Pads – Laura, from Another Cent Saved, says that cutting SOS pads in half will not only make them last you twice as long but cutting them will also sharpen your scissors!

Month 6: #Cinchspiration Weight Loss Update

I’ve done it, I’ve reached the sixth month of my Cinch program and I’m awful proud of it!  I’ve spent the past six months going through my personal work out boot camp while on the Cinch program and sharing that on a public stage.  You’ve been able to see my struggles as I’ve tried to find balance in living a healthy life as a mom.  The world has been able to watch my ups and downs through their computer screens.  The goal, besides reviewing the Cinch program, was to inspire and show how life’s challenges can be overcome. Of course, the ultimate goal was to learn how to eat and live a healthy lifestyle and to pass those values and habits on to my family.   Now for some fun before and after pictures!!

Okay so I know that these facial pictures don’t show a major difference but the difference is huge to me.  You see, my face has always been chubby and always will be.  Growing up my family use to comfort me by saying that the baby fat on my face would go away as I got older.  If it hasn’t gone away yet I don’t think it ever will.  Even when I weighed around 100 pounds I’ve had a face chubbier than some women who weighed double what I did.  It’s something I have to live with and I’m okay with that.  However, I did gain some weight in my face when I was pregnant and I’m excited to slowly be losing it.  It might not be a dramatic difference for you to see but it makes a HUGE difference in how I feel about myself.  I love it!

I’m sad to say that I don’t have before and after pictures for you just yet.  I have them!  Well, sort of.  I took before pictures and I’ve taken after pictures but the before pictures are stuck on a computer that freezes as soon as we restart it.  I’m really sad about this.  We’ll be taking the computer to get it fixed soon and you can bet that I’ll be showing them off when I get the pictures back!  I’m excited to see the before and after pictures side by side for myself.  I would show you the after picture now but it’s really not that impressive unless you saw what I looked like before.  I still don’t have an athletic build with 6 pack abs but I know that I look better than I did.  I sure feel better anyway! Update: I have pictures for you!!!  Yay!

Before and After

I’ll be honest, when I eat healthier I have more energy. Always!  I might not always like to admit it but it’s true.  I’ll take any extra bit of energy I can get.  Sure eating a candy bar and drinking a pop {or soda, or coke, or whatever} will give me a temporary bit of energy but it’s temporary and it’s usually followed by a sugar crash.  Skipping the sugary sweets alone has helped with my energy but the metabolism boosting Cinch supplement is there to give me an extra oomph.  Plus, their amazing snack bars are a great alternative to a sugary snack.  They have something magical in them that helps keep me fuller longer.  They’re great!

Cookies, Smoke, & Chaos, oh my!

We had so much fun last night getting together with some friends of ours.  The ladies baked and decorated cookies and biscotti while the men babysat and played video games.  Super fun!  We were able to talk, eat yummy treats and bake treats to give to others.  It was great!

Now fast-forward to today just before lunch.  I was sitting at the kitchen table working on finishing and publishing my last video for the Cinch program.  I knew my little sweetheart was going to wake up any minute now so I wanted to get our lunch ready beforehand.  I grabbed our lunch and laid it by the oven that I had just turned on to preheat.  I sat back down and chatted with a few blogging friends of mine on Facebook as I waited on the oven.  It never beeped so I decided to go ahead and go upstairs to get her anyway.  To my surprise, when I stood up, I notice that the kitchen AND living room are both filled with smoke!  Loads of it.  I’m in a panicked state of confusion.  My mind raced to think of what we had for dinner last night to see if by chance anything could have spilled over.  I thought, “Chicken pot pie? No.  Lasagna? No.  We had spaghetti!  No that wouldn’t cause it.”  I noticed that the back burner was smoking every so slightly so I calmed myself down and reassured myself that it was only a dirty tea pot causing the burner to smoke.  I don’t know what I was thinking, the burner wasn’t even on!  I removed the teapot to examine it but I quickly learned that it wasn’t the culprit.  When I picked it up smoke began rushing out like a geyer.  I quickly put the tea pot back.  I stood there for a moment to muster up the courage to open up the oven and see what was inside.  What on earth could cause an empty oven to produce so much smoke and possibly fire!  Oh, no, what if it wasn’t empty?  A lost teddy bear, a dish rag, who knows at this point.  I quickly peer inside as a wave of smoke attacks my face.  I see a pan of something that resembled burnt cookies.  I quickly shut the oven and breathed a huge sigh of relief.  No fire, no precious dolly, just cookies.  No big deal.  I turned off the oven and went and opened a door.  As I walk past the smoke detector, which clearly doesn’t work I realized that I didn’t know what to do next.

I called my husband in a panic because I needed to get this smoke out fast.  What if one of the upstairs smoke detectors went off?  My emotionally sensitive dog would be a mess, much less my sweet toddler.  Panic ensued.  My husband didn’t answer and I shook my fist in the air.  How dare he be at work, probably at a Christmas party, while I’m here trying to save our house from burning down?   Yes, I was a little dramatic but my heart was racing and adrenaline was flowing.  {Come to find out that he was at the pharmacy picking up a prescription for me.  How sweet!  I should have called his cell phone!}  I got online and messaged those blogging friends I was talking with just a few minutes before.  I was too jittery to explain much.  My message was something along the lines of, “HELP! Cookies started burning in the oven. Not fire but smoke everywhere. Don’t know what to do. Take outside? Let smoke out slowly? Help!”  They took longer than 30 seconds to respond so I tried to think of someone else to call who wouldn’t humiliate me for not knowing what to do.  Finally, I thought, “My mom, of course!”  She answered when I called and so sweetly and calmly instructed me to open the windows and doors on the other side of the house to let the breeze go through.  Why didn’t I think of that?  Even though I just vacuumed yesterday dog hair tumbleweeds were blowing through the house and out the door.  That gave me confidence that the smoke was headed out too .  Not to mention, a new idea on how to get rid of dog hair!  It’s very windy here today and the Christmas tree was rocking with all of it’s beautiful glass ornaments.  I run to the other side of the room, hurdling Christmas presents that had been blown to the middle of the floor and removed the ornaments that were most important to me before heading back to the kitchen.

Coming in the kitchen I see that my friends have replied to me and instructed me to take the burnt cookies outside.  I once again stand in front of the oven gathering courage to open it’s door but this time I’m prepared with an oven mitt.  I grab the pan and make a mad rush for the door.  I set the hot pan on the porch to cool down out as I rush back to the other side of the house to try and help direct the smoke out.  I don’t know how much I helped swishing a dish towel in the air but I felt productive.

Burnt Cookies

Now the rooms are much more visible with hardly any smoke left in sight.  The UPS man drops off a present and in the process nearly gives me a heart attack.  I’m a very paranoid person and I don’t usually leave my front door open so seeing a big man there, even though he was waving, was startling.  I composed myself and re-accessed the smoke situation.  The house looks empty of smoke so I begin closing the windows and doors.  When I get to the back door I find my dog eating as many burned pieces of coconut cookies as she can before I take the pan away from her.  I don’t know how she even knew that those charred remains were once delicious cookies.  I laugh at her, begin to relax, brought the pan inside and went up to get my daughter.  I’m thinking that she’s probably bouncing off the walls at this point but when I went in I found her sleeping.  I stood and watched my little sweetie sleep for a minute while thanking God for her, our warm house, and for keeping us safe.  As I walked back downstairs to make myself a warm cup of tea, I thought, “Hey, this will make a great blog post.”  Now here I am, sharing my humiliating and comical day with you in hopes that it will make you smile.

As you are probably already aware, the holiday travel season is in full swing!  Many of us will be traveling away from home for an extended period of time to visit with friends and family at Christmas.  There are plenty of hazards associated with winter traveling {traffic, snow, ice} that you shouldn’t have to worry about keeping your identity safe.  Even if you prefer to not leave town during the holiday hubbub you may still visit loved ones just a few streets over, making yourself a prime target for identity thieves.  This month, LifeLock‘s goal is to share tips about safe holiday travel.  If you’re ever wanting great tips to protect your identity you should visit the LifeLock for Life game on Facebook!  It’s filled with useful tidbits of knowledge to help keep you safe and the theme of the game changes each month.  This month, of course, is about holiday travel.

I wanted to share with you a few of my favorite tips that I picked up this month while playing the LifeLock for Life game on Facebook.  Some I had never heard of before and some were great reminders that I hadn’t thought about for a while.

 

1. Put your office’s address on your luggage and not your home address.  Isn’t that a clever idea!  I’ve never put my address on there because I didn’t want random strangers, potential thieves, to know my address where they could go and rob even more but this way you’ll still get your lost luggage returned to you without risking your security.  Brilliant!

 

2. Have your children memorize their address and phone number.  In the awful situation that you are separated it’s important for them to know how to get in touch with you.  I’m astounded at the number of young girls I work with in different ministries who don’t know their full address and phone number.  I’m talking 5th graders!  It’s important for your kids to know this information so don’t just assume that they do.

 

3. Be aware of ATM skimmers.  This one kind of freaks me out. Apparently, smart thieves can install small devices on ATM machines that are capable of taking your personal information when you make a withdraw.  My husband always monitors our bank activity closely, very closely, multiple times a day even but with the hustle and bustle of travel we’re going to have to make it a point to slow down and monitor it.  Many banks even have downloadable apps so you can monitor your activity on the go.  We need to check into this for ours!

 

4. Keep a safety candle and dry matches in your car.  This one wasn’t on the game but it’s an extra measure that my family has taken this year to stay safe.  We’ve had some transmission problems and we just got ours rebuilt and put back in.  I feel like our car is safe to travel in but if it’s not, I don’t want to be stranded along the side of the snowy road without any heat.  We’re traveling with luggage so we’ll have plenty of additional layers if needed and I always keep a blanket flat in the back of my trunk for emergencies.  The safety candle will burn slower than a regular candle and we put in a baggie with a small box of matches and put it in our glove box.  We don’t have to think about it any more but it’s there if we need it.
